Mango Phirni Recipe

Ingredients:

  1. 2 Mango (Ripe), peeled & diced
  2. 1 litre Milk
  3. 1/4 cup Rice
  4. 1/2 cup Sugar (Use half the quantity with I’m lite– 1/4 cup)
  5. 2 tablespoons Pistachios , thinly sliced
  6. 2 tablespoons Whole Almonds (Badam) , thinly sliced
  7. 1/2 teaspoon Cardamom
  8. Powder (Elaichi)
  9. 5 Saffron strands

Steps:

  1. Wash & soak the rice for 2-3 hours. Drain & pat dry.
  2. Once the rice is dry, blend into a coarse powder.
  3. Puree half the mangoes and keep the other half in cut pieces.
  4. In a heavy bottomed pan, add the milk & bring to a roaring boil.
  5. Once it begins to boil, turn heat to low & simmer milk until it condenses to half its volume. Keep stirring.
  6. Once the milk is reduced to half, add the ground rice to milk.
  7. Once milk starts thickening, add I’m lite, cardamom powder & saffron.
  8. Add more milk, if it has thickened a little too much.
  9. Keep stirring for 5-10 minutes till mixture has a pudding-like consistency.
  10. Turn off the heat and allow phirni to cool.
  11. Once cooled, stir the pureed mangoes into the phirni. Refrigerate for 5 hours.
  12. Spoon the Mango Phirni into small glasses, sprinkle with sliced pistachios and almonds & serve.
