Kaju Katli, Guilt-Free

From Dussehra & Diwali celebrations to the wedding season, there is no dearth of festive feasting in the winter months. And with so much mithai all around us on every occasion, it can get pretty hard to avoid calorie-laden sweets during this time. But there’s no reason why you shouldn’t indulge in a little festive feasting. Especially, when you can still keep up with your fitness goals. How? With your one & only smart sugar, I’m lite.

Some of the most common sweets that are associated with Diwali are kaju katli, soan papdi, coconut ladoo, and khoya barfi. And among these, kaju katli has to be the most popular one of the lot. Fudgy bites that melt in your mouth, what’s not to love? This mithai has the right level of sweetness and if made with I’m lite, it also has 50% less calories.

Ingredients:

  1. 1 cup cashews
  2. ½ cup sugar (Use half the quantity with I’m lite– ¼ cup)
  3. 5 tbsps water
  4. 1 tbsp ghee
  5. 1 tsp chopped rose petals

Steps:

  1. Powder the cashew.
  2. On a low flame, heat I’m lite & water in a thick bottomed pan.
  3. Grease a plate & keep aside.
  4. When the I’m lite mixture has dissolved, add the cashew powder.
  5. Mix & keep stirring the cashew mixture on a low flame.
  6. The cashew mixture will start thickening.
  7. Cook the kaju mixture for 7-9 minutes until the dough starts to come together.
  8. Remove the whole lump of the kaju dough from the pan & place it in a plate.
  9. Add the rose petals & ghee to the cashew mixture.
  10. When the heat in the dough is hot enough to handle, knead the cashew mixture lightly.
  11. Flatten the dough and place it on the greased plate.
  12. Place a butter paper on top and roll the dough gently from all sides till you reach a thickness of 3-5 mm in the dough.
  13. Remove the butter paper & let the rolled dough cool.
  14. When completely cooled, cut the cashew dough into square or diamond shapes.
  15. Remove the kaju barfi with a butter knife.
  16. Serve the kaju katli straight away or keep in an airtight container.
