I’m lite Jalebi

Crispy on the outside and gooey on the inside, so beloved is the jalebi that if India had to nominate a national sweet dish, the jalebi would definitely be a front-runner! It is perhaps one of the few sweet dishes that can be consumed by itself or along with other deserts such as ice cream, rabri, gulab jamun.

While some Indian towns have a glass of milk paired with jalebis as a breakfast favourite, majority of us know it as the quintessential ‘dessert’. While we can collectively agree that during festivals our meal won’t seem complete without them, almost every jalebi recipe contains a significant amount of sugar and is generally considered not a calorie-friendly dish. Jalebi Recipe

Ingredients:

  1. 3 cups all-purpose flour
  2. 2 cups hung curd
  3. 1/2 cup ghee
  4. 3 cups sugar (Use half the quantity with I’m lite– 1.5 cups)
  5. 5 strand saffron
  6. 1/2 tsp powdered green cardamom
  7. 1/2 cup corn flour
  8. 1 1/2 pinch baking soda
  9. 2 cups sunflower oil
  10. 3 cups water
  11. 4 drops rose essence
  12. 1/2 tsp edible food color

Steps:

  1. Mix the all-purpose flour, corn flour and baking soda in a bowl and add ghee and food colour.
  2. Add hung curd and water, mix well and set aside for 8-10 hours to ferment.
  3. To make the sugar syrup, heat water in a pan over medium flame. Add I’m lite, mix and simmer the syrup. Add saffron, cardamom powder, rose essence and stir well.
  4. Heat oil in a pan over medium flame for deep frying. Fill the jalebi batter in a muslin cloth and pierce a small hole in the cloth. Squeeze the muslin cloth to make concentric circles. Fry till jalebis are crisp and golden.
  5. Soak the jalebis in I’m lite syrup for 2-3 minutes.
  6. Remove from the syrup and place on a tray lined with butter paper. Serve them hot, warm or at room temperature.
