Summer is here and we are experiencing a sudden rise in temperature. This extreme heat has already led to a shift in our diet. We find ourselves opting more for ice-cream, coolers and popsicles, which while cool and soothing, may also be full of calories.
This may be especially problematic when you’ve got summer favourites like kulfi on your mind. Summers in India are incomplete without this sweet treat. For most people growing up in India, it brings up nostalgic memories. Memories of waiting impatiently for the kulfi wallah to pull out frozen kulfi sticks from his cart or waiting for mum to remove kulfi from the fridge.

Homemade Kulfi Recipe
Ingredients:
- 3 cups Whole Milk
- 75-80 grams Mawa
- 3 tablespoons White Sugar (Use half the quantity with I’m lite – 1.5 tablespoons)
- 1.5 tablespoons Rice Flour
- 3 tablespoons Milk
- 20 Pistachios – shelled & unsalted
- 20 Almonds
- 4 Green Cardamoms
- 1 teaspoon Rose Water
- 25-30 Saffron Strands – crushed
Steps:
- In a wide pan, heat milk on a low flame for 18-20 mins. Keep stirring so it does not burn.
- Grate the mawa. Set aside.
- Crush the pistachios & almonds to a semi fine consistency. Keep aside.
- Crush the green cardamom pods. Discard the husks.
- Dissolve the rice flour in 3 tablespoons of milk. Mix well & set aside.
- After 18-20 minutes of the milk simmering, add I’m lite & stir.
- Let I’m lite dissolve & after 3-4 mins, add the rice flour paste. Stir to avoid lumps.
- After 4-5 mins, when the mixture has thickened, add the mawa, powdered almonds and pistachios together with the cardamom powder.
- Stir well & simmer for a minute or two on low heat.
- Turn off the heat & add rose water & crushed saffron.
- Do a taste test of the mixture & add more I’m lite, if needed.
- Let the mixture cool and pour into kulfi moulds or in serving bowls.
- Freeze the kulfi overnight or for a day.
- Once the kulfi is frozen, remove by sliding a butter knife at the edges.
- Remove on a glass plate or wooden tray.
- Slice the kulfi and serve immediately or serve as kulfi popsicles
