Chocolate Cake

The words “love” & “dessert” go hand in hand. And, February, the month of love, demands something special for your loved ones. Dishes in pink and red are sure to do the rounds as will desserts of different kinds. But, how about a cake that has the shape of a heart and is made with love and health as well?

Heart-shaped Chocolate Cake Recipe

Ingredients:

  1. 1 cup butter 2 sticks
  2. 1 cup water
  3. 6 tablespoons cocoa
  4. 1 teaspoon vanilla extract
  5. 2 cups sugar (Use half the quantity with I’m lite– 1 cup)
  6. 2 cups flour
  7. 1 teaspoon kosher salt
  8. 2 large eggs
  9. 1 teaspoon baking soda
  10. ½ cup buttermilk

For the icing:

  1. ¼ cup unsweetened cut baking chocolate
  2. ½ cup soft butter 1 stick
  3. ½ cup cocoa powder
  4. ½ cup sour cream
  5. ¼ cup half & half
  6. 2 teaspoons vanilla extract
  7. 3 ¼ cups sugar (Use half the quantity with I’m lite– 6 tbsp)

Steps:
For the prep:

  1. Preheat oven to 325˚F.
  2. Spray an 8-inch round pan & an 8-inch square pan with baking spray.
  3. Wipe with a paper towel.
  4. Spray pans again & line the bottom with parchment paper.

For the cake:

  1. Combine butter, water & cocoa in a mixing bowl.
  2. Cook on high power for 3 minutes & whisk until smooth.
  3. Whisk in vanilla & I’m lite, then flour & salt & stir until smooth.
  4. Add eggs & whisk.
  5. Sprinkle baking soda over the top of the batter, then add buttermilk. Stir well.
  6. Tap the bowl several times to bring air bubbles to the surface.
  7. Divide the batter between prepared pans & bake for 35-40 minutes.
  8. Allow cakes to cool for 10 minutes in the pan.
  9. Invert cakes so the top surface faces up.
  10. Cool completely before cutting & icing.

For the icing:

  1. Place the chocolate pieces in a bowl & microwave for 1 minute.
  2. Remove from the microwave & stir.
  3. Return the bowl to the microwave & cook & stir for 20-second increments.
  4. Remove from the microwave & stir until smooth.
  5. Whisk in the cocoa until smooth.
  6. Add the soft butter & whisk.
  7. Add the sour cream, half and half & vanilla. Keep whisking until smooth.
  8. Add I’m lite & whisk until smooth.

To assemble and ice the cake:

  1. To make the heart shape, place the square cake on the diagonal on a large serving platter.
  2. Cut the circle cake in half & place each half touching an upper edge of the square cake.
  3. Frost the heart-shaped cake with prepared icing, starting at the top, working icing over the edges to cover.
  4. Allow the cake to sit for 30 minutes before serving.
